What sizes, grit, and types of stones to use

Typically, there are 4″ and 8″ stones. You will sharpen faster with the 8″ versions. A full set of diamond stones would include 140, 220, 400, and 600 grit Diamond stones combined with 800, 1000, and 2000 stones. I know many systems come with 4, 6, and even 8 stones. I don’t believe you really need that many options. You may want to start with a 220 diamond and a 400 ceramic with a strop as a good start and go from there. Again, toothy edges may be the best for cutting, while polished edges may simply be more flashy.

What angles are recommended for sharpening various knives

According to my search results, the recommended angles for sharpening various knives are as follows:

  • Benchmade recommends 30-35 degrees
  • Spyderco recommends 40-degree angles as the best compromise
  • Cold Steel recommends 23 to 25 degrees
  • SOG uses and recommends 22-24 degrees
  • Civivi recommends 30 degrees
  • You can see that there is some disparity between companies as to their sharpening angle. You may want to try and keep the angle that your specific knife is delivered with.

What final stone to use for various angles

Sharpen a 17-degree edge to 1500-2500 grit.

Sharpen a 20-degree edge to 400-800 grit.

Knives sharpened too finely (3000 grit and above) will tend to glide over the paper and not display that knife-sharpened paper-cutting action.

For toothy edges, use 300-600 as the final stone.

For mid-grade edges, use 800-1200 grit.

For fine edges, use 1200-2000 grit.

And, for the Mirrored polish, use 3000 and above (but again, remember the caveat above.)
